The flame that roasts

To create the right flame Lauro and Sara Chelotti our Master Roasters come in the workshop early in the morning to switch on the stove.  It will take a good three hours for the stove and the flames to reach the right temperature.  During this time the stove must be constantly fed with oak wood.

Whilst the gauges read the temperature and give indications, it is the Lauro’s wealth of experience that tells him when the flame is the right colour and temperature.  It is only then that the flames can be let in to roast the coffee beans.
