Making the perfect roast

During the roast, the coffee needs to be constantly checked.  Lauro and Sara Chelotti our Master Roasters check the colour and the scent.  It is only when the beans are exactly roasted, with the right colour and smell that the beans are released.

Our 1952 Victoria direct flame coffee roaster does not come equipped with a computer but our Master Roasters come with sixty five years of experience.  The knowledge of how long it takes every different type of coffee bean be roasted is what makes a Master Roaster.  Knowing what colour is the perfect roast, whether to add a bit more flame or decrease is what makes MiKoffee a form of art.
